🎃 Pumpkin Protein Mug Cake


Ready in: 2 minutes

Serves: 1


Ingredients:

▪︎3 tbsp (45g) pumpkin purée

▪︎1 scoop (30g) vanilla or pumpkin protein powder

▪︎1 tbsp (8g) oat flour or almond flour

▪︎1 tbsp (15ml) unsweetened almond milk

▪︎1 egg white (or 2 tbsp liquid egg whites)

▪︎½ tsp baking powder

▪︎½ tsp pumpkin pie spice (or cinnamon + nutmeg)

▪︎½ tsp vanilla extract

▪︎Optional: stevia or sweetener to taste


Instructions:

1. Spray a microwave-safe mug with cooking spray.

2. Add all ingredients to the mug and mix until smooth.

3. Microwave for 60–90 seconds, depending on your microwave.

4. Let it cool for 1 minute, then enjoy as is — or top with a dollop of Greek yogurt or sugar-free whipped cream!
